Role Overview

Atlantis The Royal is hiring an Executive Sous Chef to oversee kitchen operations across its premium dining outlets in Dubai. You will manage culinary production, menu execution, inventory controls, and a multi-national kitchen brigade of 40+ staff.

Key Responsibilities

Supervise daily food preparation, cooking techniques, and plating standards across stations
Manage recipe costing, food waste tracking, and supplier inventory orders
Conduct daily kitchen line checks for food safety, temperature logs, and hygiene compliance
Train commis chefs and station heads on recipes and kitchen safety procedures

Candidate Requirements & Qualifications

7+ years culinary experience with at least 2 years in a Sous Chef or Executive Sous Chef role in 5-star hotels or recognized fine-dining establishments
Demonstrated expertise in Mediterranean, European, or modern international cuisine
Level 3 or 4 Award in Food Safety / HACCP certification
Strong team leadership and multi-outlet kitchen management experience
